It’s great for dipping into or to serve as a rice cooker or rice pudding.
If you’re looking for a healthy, hearty recipe, this is the one.
Ingredients: 1 lb ground beef (about 8 oz), chopped 2 tbsp minced garlic 1 medium onion, chopped 2 cloves garlic, minced 2 tsp ground ginger 2 tsp dried oregano 2 tsp crushed red pepper 1 tsp ground turmeric 1 tsp dried chili powder 1/4 tsp sea salt 1 tbsp olive oil 1 tbsp white wine vinegar, plus more for drizzling 1/2 cup rice (1 cup uncooked, or 1 cup cooked) 3 tbsp soy sauce (optional) 1 tsp salt 1/8 tsp ground pepper Directions: Combine ground beef, garlic, ginger, oreganol, chili powder, red pepper, turmeric, and salt in a large saucepan over medium heat.
Add in rice, cover and cook for 5 minutes or until rice is tender.
Remove from heat and let cool.
Slice into 1/3-inch slices and transfer to a bowl.
In a small bowl, combine soy sauce, vinegar, salt, and pepper.
Sprinkle rice with the rice mixture.
Serve with rice pudding or soup.
Recipe Notes: If you like, you can also serve this with brown rice or couscous, but it’s too much rice for me to do that at the moment.
