Heat the coconut oil in a pan over a medium heat.


Add the onion and cook for a few minutes until translucent.


Add in the garlic and cook another minute or two.

Heat coconut rice for 10-15 minutes, until the rice has absorbed all the flavours and is browned on the outside.

It will become a bit thick when cooked, but it will still be a delicious rice.
